Day totals — baked vs raw

The hero numbers for a delivery day. Counts confirmed-or-later orders only; drafts never reach the floor, and an order with no delivery date is excluded from every day rather than silently bucketed.

The Montreal wall-clock cutoff behind `isNew` (added 2026-08-12). Carried so the UI can NAME it — "orders placed after 05:00 are marked New" — instead of keeping its own copy, which would drift the moment an install overrides `ordering.floorStartLocal`.
